Olive wood has been used in Mediterranean kitchens for centuries for a simple reason: it is one of the hardest, densest woods you can put a knife on, and the grain is unlike anything else.
Olive wood, not a wood blend
Every board is cut from solid olive wood. The grain runs through the whole piece, so the pattern on the surface is the pattern of that tree — no two boards look the same.
Dense enough to stay flat
Olive is a tight, close-grained wood. It absorbs less moisture than open-grained boards, which is why it resists warping and holds up to daily use at the counter.
Kind to your knives
A wood surface gives under the blade instead of blunting it, so edges stay sharper for longer than on glass, stone or plastic.
Looking after your board
Three habits keep an olive wood board in good condition for years.
1. Hand wash only
Warm water, mild soap, a soft sponge. Never put the board in the dishwasher and never leave it soaking — trapped water is what splits wood.
2. Dry it upright
Wipe it down and stand it on edge so both faces dry evenly. Drying flat on a worktop traps moisture underneath.
3. Oil it monthly
A thin coat of food-safe mineral or olive wood oil once a month feeds the grain and keeps the colour deep.

The shape and size match, the grain does not. Each board is cut from a different piece of wood, so the pattern and the colour vary from one board to the next.
